Alberto's Recipe For Tiramisu

Everyone knows and loves Tiramisu. A favorite in the U.S. and Italy. What self-respecting Italian web site would be complete without one? This version comes from the kitchen of La Chiusa and the chef who makes our "Welcome Dinner" there, Alberto. He is a wonderful cook, with a sweet smile and no last name. An alchemist on the burners.

For 4 people.

  • 250 grams (1/2 pound) Mascarpone
  • 3 tablespoons of sugar
  • 3 Eggs
  • Lady's Fingers
  • Caf
  • A little of vanilla.

    Beat the sugar with the yolks of the eggs and seperately, beat the white of the eggs into a frothy snow-like condition. Very gently dear reader, mix together the mascarpone, the yolk sugar glop, snow-like egg whites and vanilla. Make a good coffee - not one of those cheesy Maxwell House blends, but something robust. Something an Italian would be proud of. The coffee should be warm.

    Have on the side a pyrex dish (pirofila). Quickly dip the Lady Fingers in the coffee and layer them in your dish. Marscapone cream mix comes next, again da fingers and da cream. Last layer is of course the Mascarpone cream. Sprinkle with chocolate on top. Put in the fridge for a few hours.
