Pizza Chicken
Straight from the heartland of the good ol' USA is the following recipe. Brought to you by the Kent (Ohio) Junior
Mothers' Favorite Recipes cookbook. Who, I ask you, who could know better
than the Kent Junior Mothers on what is a nutritious and delicious
Italian meal?
Now the most surprising thing about this pizza is there's no dough to this pizza! No pizza dough - imagine that! Who would have thought? They sure do things different there in Kent, Ohio.
Ingredients
- 1 1/2 lbs. boneless chicken breast skinned
- 1/4 lbs. pepperoni sliced
- 1 jar of regular Ragu sauce (while in Italy it may be
difficult to find this)
- Mozzarella cheese
- Noodles
No, we were not told how much cheese and noodles. That's the
beauty of this recipe. We suggest a couple of handfuls of cheese
and a pot of noodles.
Directions
Cube the chicken and quarter the pepperoni slices - make little
pizza slices out of them. Maybe that's the "pizza" part. Pour in
yer Ragu. Seal and refrigerate overnight...oh we forgot to mention
you need a sealable plastic bag.
Okay.
It's the next day and you're back from a day of gazing at
astounding works of art in the Uffizzi, wonderful works by some of
Europes Great Masters. It was an afternoon of art and sipping
fabulous Brunellos with some light panini at lunch. You're tired
and looking forward to your villa and....that's right...your Pizza
Chicken.
Pull that bag of Ragu stuff out of your refrigerator. Pour in a
9 x 9 casserole dish. Cover with aluminum foil and bake at 325
degrees Fahrenheit for 45 minutes. Take the foil off, cover with
your cheese - grated or otherwise - and bake for 15 minutes
longer. Serve over the noodles! Your family will love this...especially if they're from Kent, Ohio.
Listen, we have to tell you the truth. We haven't tried this
recipe. No one around these offices has been willing or able to give
this one the old Kent Junior Mothers try. So we're counting on you!
