Da Tuna's Gravy

In memory of my good buddy, Frank Daig: Franco Daigo's "One Pot" Villa Pasta Sauce, also known as Da Tuna's Gravy

Here is our choice of a "tried and true" villa recipe for your basic red sauce, Italian Style - simple and unadorned. Best yet, all you need is a pot, knife, spoon and can opener.

  • Ingredients
  • 1/4 cup olive oil
  • 3 cloves of garlic
  • 1 small onion
  • 1 tablespoon thyme
  • 2 28 oz. crushed tomatoes
  • 1/2 shredded carrot

    Directions

    Heat the oil, saute the onions until translucent,
    add garlic for one minute or so. Dump in the tomatoes, thyme and carrots.
    Bring to boil. Let simmer with frequent stirring for 30 minutes.
    Serve on al dente noodles.

That's it. One pot, one knife, one spoon and one can opener. This serves a small Italian family. Bravo e prego!

Addendum: Frank passed on at an early age November 15, 2004. He had a passion for food, wine and laughter. Trained at Cordon Blue, seasoned in Mexico and Cannes, made his home in Pennsylvania, and my good buddy for over 30 years. I called him, "Da Tuna." Frankie lad, I miss you today.
